Page 18 Hells Canyon Journal April 26, 1995 Of Cabbages and Kings By Marjorie Baker Chicken Feed The blueberry is not f just a tame variety of the huckleberry. In fact, the blueberry is more closely related to the cranberry. These berries have four to five cells and small seeds, while the huckle- berry has I0 cells and large seeds. Also, the blueberry fruits grows in large dense clusters. While the blueberry we know is mostly cultured, there are wild blueberry,. bogs in other parts of the country. The blueberry is a very useful fruit. It freezes well and can be used directly out of the package, or it can be canned and stored for pies. It is also delicious served fresh with milk and sugar or as a topping for ice cream. Like most fruit, it's application is usually for desserts, but it is useful for other dishes as well. Here's a simple chicken dish. (In case you question Recipe: 4 chicken breasts, boned and skinned 1/2 teaspoon salt pepper to taste 2 tablespoons margarine I teaspoon minced garlic 1 1/2 cups orange juice I tablespoon cornstarch orange-flavored liqueur (op- tional) I cup blueberries the rightness of putting blue- berries and poultry together, read Rex Stout's book "Too Many Cooks" where the pri, vate investigator/gourmet, Nero Wolfe, gives examples of poultry fed on blueberries as an ultimate in taste treats!) Melt the margarine in a large, fiat skillet. Gently saute the minced garlic. With a slot- ted spoon, removed the lightly browned garlic. (If you allow garlic to burn, it gives a bitter taste to your food.) Salt and pepper the chicken breasts and place in the hot garlic-flavored mar- garine and saute 3 min- utes on each side. Remove the chicken to a plate. Mix the cornstarch with 1/4 cup of orange juice. Heat the remaining or- ange juice in the pan from which you have just re- moved the chicken. Add the dissolved cornstarch and cook until it is slightly thickened. Add the chicken and cover to cook a few more minutes or until done to your satisfaction. Add the blueberries and the or- ange liqueur if desired. Cook for five more minutes at a gentle simmer. Remove the chicken to a platter and ar- range in a circle. Pour the blueberry sauce into the cen- ter and serve some with each piece of chicken. Garnish the platter with shavings of or-. ange peel.
